RECIPE: Corn Dog Muffins (Not just for kids!)

Requires a mini muffin pan


6     Hot Dogs (each Hot Dogs cut in 6 equal pieces for a total of 36 pieces)

Muffin Mixture
1 ¼ Cup Flour
¾    Cup Corn Meal
¼    Cup Sugar
2     Teaspoon Baking Powder
½    Teaspoon Salt
1     Cup Milk, or choice of (Soy Milk, Coconut Milk, Almond Milk)
¼     Cup Vegetable Oil
1      Egg beaten

Preheat Heat oven to 375.  Grease or spray oil muffin pan.

Combine all muffin mixture ingredients and mix until all ingredients are moistened.

Fill each muffin cup half full with batter.  Insert a cut piece of hot dog into the batter standing vertical. Push to bottom of batter. Continue and fill all muffins cups.

Bake for 10-12minutes.  Serve hot with condiments on the side.

Makes 36
